Bad Santa Holiday Cookies
8 oz Butter
1 c Brown sugar
½ c Sugar
3 c All-purpose flour
¾ tsp Baking soda
1 tsp Salt
1 tsp Cinnamon
½ tsp Nutmeg
8 oz Bad Santa Cascadian Dark Ale
1 ½ c Bittersweet chocolate chips
1 c Dried cherries
½ c Sugar
1 tsp salt, topping optional
In a small pot, melt the butter and stir on a medium low heat until the butter begins to brown. Take it off the heat and allow the brown butter to cool.
Sift the flour, baking soda, spices and first salt together and set aside.
Once the butter starts to set up, mix it together with the brown sugar and first sugar.
Slowly add the eggs until well incorporated. Do not allow too much air into the mixture.
Slowly add the dry ingredients to the sugar mixture.
When the dry ingredients are incorporated, slowly pour in Bad Santa.
Stir in the chocolate chips and cherries.
Cover the dough and refrigerate for 20 minutes.
Take out of the fridge and spoon the cookie dough out. Coat the dough in the last sugar and roll onto balls. Add a little extra sugar on top if desired. Sprinkle the top with a little salt if desired.
Place on lined sheet trays. Do not press the balls down.
Bake at 375 for 6 minutes and rotate for another 6 minutes, or until done.
