The "Saison" ales of Belgium inspire our special vintage ale, Saison du Pelican. With a fruity, spicy, aroma from the Belgian yeast, herbal notes from the Goldings hops and a snappy, refreshing finish, Saison du Pelican combines traditional flavors with excellent drinkability. Bottle conditioned for an effervescent carbonation level and added complexity of flavor.
Darron's Tasting Notes:
The 2011 release of Saison du Pélican has a couple of minor tweaks to its formulation and flavor profile compared to previous releases. Previous versions have used flaked spelt as a supplemental grain, but this year we discovered that malted spelt was available. Including the malted spelt has been a very pleasant change, giving the beer a subtly enhanced, rounded malt character. The finish is still equally dry and snappy, and the residual sweetness is unchanged, but the fullness of malt flavor has been enhanced.
